Not all VTOLs are created equal.

Harriers were one way to do it, with the nozzles, then you had projects like the Yak-38 or Mirage IIIV which used smaller lift jets which were "simpler" but took more fuel and you ended up hauling dead weight on horizontal flight, then the F-35B which uses a shaft connected to the main engine to power said "lift fan", which still is dead weight when not in use, and so on.

Yes I'm aware of that, I'm aware the difference between barriers and yak and F35.

With the exception of F35, the VTOL concept shouldn't present problems for Chinese engineers now 50 years on!

VTOL engines are probably more complicated and more expensive to maintain. The buyers will be feeling stupid if not right now.
...But those buyers can't build CATOBAR carriers anyway? F35B gives them the ability to covert their LHD/LHA or heli carriers into small carriers, or they could just make a WWII style straight deck carrier and throw F35B on it then call it a day (≖_≖ ) They'll be happy to join the carrier club which they couldn't without F35B (I know harriers exist but they're just in a different league compare to actual fighter jets), why would they feel stupid?

China is different because they already have carrier borne jets and EMALS ready (or will be ready when 076 is out). If they want their LHDs to have the ability to operate fix wing aircrafts, adding EMALS on there is obviously much more cost effective than developing a STOVL jet from scratch (which most likely the only buyer for this jet is themselves).

They all chose the most cost effective method for them ╮( •́ω•̀ )╭ and none should feel stupid.

Maybe China is behind in engine, but not 50 years behind! For crying out loud, VTOL tech is 50 years old!
China has an Harrier GR5 in a military aircraft museum, …

And where the Dornier Do 31 was developed, this aircraft is now being tested:

Incidentally, the company is based in the old Dornier administration building.

But the first flights with passengers without a pilot on board were in China:

China is leading in autonomous flight.

Catapult is nothing new. Russian Karakurt class corvette launches UAV into air by catapult due to the fact it is too small to have a helipad.

Size matters I guess?
People are excited about KJ-600. Would it be operable from 076? Or a smaller version?
