The more vinegar the better?

Soy Sauce is not an ingredient in making fried rice..... Most of them anyway......

And does anyone know of a dish that is vinegar based? (No Sweet N' Sour please!)

I know its not an ingredient, but some chefs just add it in to boost the flavour. Well theres one dish, but I dunno if it counts as being vinegar based. Its stir fried potato with chilli and vinegar.

That counts. The only dishes I know that uses vinegar is eggplant, Tofu, and eggs.

The tofu dish is similar to Mapo Dofu, almost the same, but you add dark vinegar while cooking. As for eggs, it's twist on your sunny side down (my family don't do the raw yoke thing) but instead of soy sauce, my mom smothers the eggs with thick white vinegar based sauce filled with bell peppers.(China grows them?) Says it's a traditional dish.

Oh, ok. Thanks for the info. I dont think there are alot of vinegar based dishes in the world....i'd say vinegar is most used for dippings and for cold dishes.

I first tried that flavor of chips in Lays....didnt like it. Wasn't until I went to the Korean restaurant around the block from here that I liked it and saw what the Jersey shore meant by salt and vinegar helps bring out the flavour of the french fry...that starchy flavour.
