Not sure I understand this. China by all accounts is still playing catch-up when it comes to the bleeding edge of engine development. If they could develop a two-engine configuration that serves the same need as the tri-engine platform we've seen today, and do so in a reasonable timeframe, why wouldn't they?
That's like asking why not 1 massive engine? Is it because Chinese engines are unreliable?
At some point you have to wonder, if China is leading in every visually observable sectors, maybe China is also leading in visually un-observable sectors

Its hard to find the words to describe this day. Its momentous regarding military aviation history:
  • China became the 1st country to unveil a functional 6th generation prototype

  • China became the 1st country to unveil multiple functional 6th generation prototypes. As if F-22 and 35 were unveiled at the same time back in the 90s.

  • China has overtaken US in combat aircraft design and development.

Because common engine among platforms simplifies logistics and maintenance and reduce cost by economy of scale, a new line of engine is always expensive to develop and not likely in "reasonable timeframe"

And whatever China's next gen engine be it variable cycle or RDE it is much cheaper to develop one engine to fit all platforms then to develop multiple engines of basically the same engine but different size and thrust

Electricity generation? it's estimated that 6th gen aircraft could need 1 MW. That's for radar, computing, EW, DEW, communication etc.

because one massive engine doesnt exist neither does U.S . 3x WS 15 will be equipped into this 6th gen plane in the future. WS-15 performance is equivalent to the engines that F35 or F22 is using.

If you have 3 WS-15 installed into one plane, it gives 3x more power than F35.
