Does the recent pics/videos of KJ-600 leading J-15s lend additional credence to the possibiliy of having KJ on the STOBAR carriers, since the STOBAR carriers mostly just have J-15s?

I highly doubt it. Even if it could start from a STOBAR carrier, and that's a very big if, it would have to be so light that it could not stay in the air for any meaningful time.
It flies with J-15s because J-15s will also fly from the 003. I don't think anyone seriously thinks that the Fijian will only have J-35s flying from it. And the J-15 fills roles that go beyond what the J-35 is probably intended for.

Maybe because it is. I wonder whether the nose houses a search radar too.
It is, just like the E-2D. Adding more sides increases power requirements and weight of the dish, both things which are at a premium in a carrier based aircraft.
I have my feeling that the aircraft itself was ready long ago but it's just waiting for Fujian to enter service
