May be it's not carbon fiber. Carbon fiber would never be used for high temperature applications.
C/SiC is Carbon fiber, just better than the one in your mind.

The following photos are sealing petal of TVC engine (WS-10TVC). It is the one directly in contact with the hot gas. What you are seeing on J-20 is the out most covering petal whose working condition is even less demanding.

The black material is only the outer most layer of the nozzle, so should be insulated from the heat closer to the nozzle flame. But I have considered the possibility that they’re ceramics instead. Either way they’re not metal.
They are probably ceramic based composite (CMC) that can be in direct contact with hot gas.

Also worth to note that, the finished product of CMC may look almost identical as metal, see the photos in #5,931
