Does opening the weaponsbay impact the roll rate?
Not appreciably, the J-20 like most modern fighters has a very high roll rate. As you have surmised, anytime you open anything, or stick it out in the breeze, you are impacting airflow, could be positive or negative, depending on what you are trying to accomplish?
The PS'ed photos above of the pylon mounted A2A? missles would obviously create some drag. When you pop a fuselage mounted side bay open, you obviously create some "dirty, turbulent flow along with the drag, it doesn't normally affect performance negatively, as most weapons deployment is sub-sonic.
Now if you were super-sonic that drag would be exponentially higher, but I believe the F-22 is capable of launching weapons from those side bays when supersonic, and the J-20 may be as well, a little research from our smart guys would help us all have a better understanding who can do this, and who has to be subsonic??
