Start a good fire in the middle of the oven and then moved to one side of the oven to cook food and to help control the temperature.

Yummy!!! Absolutely amazing!!! can't believe you actually built a brick oven in your backyard!!! Incredible!!! My mouth is watering just looking at the delicious food coming out of it!!! :):p

One little suggestion... You will get a better crust on your pizzas if you put them on flat metal plates, instead of pans. If you want, you can actually just put the pizza directly on the oven floor. It should be the cleanest surface in your home because of the high temp. Your pans used above will gather water vapor above the pizza, which effectively "steam" your pizza dough and make it soft.

My technique has been evolving. What I now do is push the embers to one side and place a damp rag at the end of the shovel/poker and pass it over the bricks to get the ash of off the bricks. This has produced a “better crust” for the pizza.

Thank you for the complements my friend. My two boys really enjoy making their own pizzas and seeing things cook in the oven. It’s a great family activity.

Jura has dared me to open a cooking thread. I seem as if you have some very good ideas and recipes up your sleeve. I need some good contributors

We should definitely share recipes! I love cooking, especially grilling. I am especially proud of my ribs and pork belly. It took me a couple years to figure out a way to consistently get crispy skin on my pork belly, chicharron style (of course, you have to factor in the fact that I am not allowed to cook pork belly too many times because the boss says it's not healthy...) :cool::p

A cooking thread is an awesome idea! We can exchange ideas and recipes!
