Avocado Toast with Ricotta and a Poached Egg

INGREDIENTS
1 avocado
* salt to taste
* pepper to taste
* lemon juice from 1 lemon
2 tablespoons white vinegar
2 eggs
4 tablespoons ricotta cheese
2 slices ciabatta bread, toasted

DIRECTIONS
Cut your avocado in half, remove the pit, and roughly dice. Remove chopped avocado into a bowl and lightly mash. Season with salt, pepper, and a squeeze of lemon juice. Mix until all of the ingredients are well blended.

Make the poached eggs: Boil a pot of water, once boiled add a pinch of salt, and two tablespoons of white vinegar. Crack the two eggs into two separate ramekins.

Quickly stir the water and create a whirlpool. Add one egg to the water, turn off the heat, and cover the pot with a lid. Let the egg sit for 4 1/2 minutes then remove with a slotted spoon. Reboil the water and repeat with the second cracked egg.

Make the avocado toast: Toast the ciabatta bread. Add two tablespoons of ricotta to each of the slices of bread. Top with mashed avocados, and poached egg. Season the poached egg with salt and pepper.

Creamy Lemon Garlic Pasta

INGREDIENTS
1 tablespoon olive oil
1 large onion, chopped
1 garlic clove, chopped
1 tablespoon jalapeno, minced
2 tablespoons flour
2 ½ cups vegetable broth
1 box shell pasta
¼ cup heavy cream
½ lemon, juiced
* zest of 1 lemon
3 cups shredded mozzarella cheese
*salt and pepper to taste
1/2cup parsley, chopped

DIRECTIONS
In a large pot heat melt olive oil. Add onion, garlic and jalapeño. Once onion begins to soften, add flour and cook until slightly bubbly. Stream in broth, stirring constantly until liquid is cloudy and begins to thicken. Cover and bring to a boil.

Once boiling, add shells and press down to ensure pasta is completely covered. Bring to a boil, then reduce to simmer and cover. Cook according to package instructions or until desired tenderness.

Remove from heat and stir in heavy cream, lemon juice, lemon zest and cheese. Continue stirring until cheese has melted and is evenly distributed, adding more if desired.

Season with salt and pepper to taste. Stir in parsley and serve.
