He wasn't illustrating the similarity between the 002 and 003's design, he was using 002's existing models to explain 003's construction. For 002, Dalian first assembled the propulsion compartments (in red) then attached the anti-mine/anti-torpedo belt (in purple). JNCX took a different approach and assembled an entire super-module consisting of both the propulsion compartment and the side belts.
If 002 and 003's hullforms turn out to be similar, I wouldn't be surprised. But that was not what fzgfzy wanted to express in his graphic.

I don't think we have solid evidence of two carriers being simultaneously constructed yet.I'm surprised that we're nearing the commissioning of the CV-17 and on the cusp of the assembly of two Type 003 vessels and yet we haven't heard anything about a Batch 3 J-15 or a new variant. Nothing suggests that they've been built and are undergoing land-based training, either.

We have seen a new variant with a new nose gear for catapult launch.
