Do we know which of the 3 types did the very first landing and very first take-off from Fujian? And was it in 2024?

The display board first shows the payload to the pilot to know the aircraft’s actual maneuverability, then shows to the catapult controller to confirm the power level setting for launch.

If the intelligence from “Frame check” is correct, this would be a fully loaded catapult test. However, the J-15T in video obviously no weapon, the video material may have been edited:

Some clips of the J-35 likely came from later heavy-load tests.
Main videos of the J-15T may have been from much earlier light-load tests.

If we place truck scales (like those used for weighing trucks at highway weigh stations) at the three wheel positions within the launch pad's takeoff section and connect them to the launch system's computer, would that save more time?

That makes no difference to the launch time. In fact you might increase the launch time for some tens of seconds. Also if the weighing scale face down-time, or the weighing scales need scheduled maintenance, that launching position is out of services as well until the scale is back online.

Also the front landing gear is on the steel plate connected to the groove of the catapult. Measuring weight exerted on the front land gear may pose problem.

Doing the weighing process before the aircraft is moved to the launch position means you can complete the weighing on several aircraft before they are moved to launch point.

Last point is you don't really need a weighing scale to calculate the weight.
