Presumably because integrating fully optimized VLO engines would substantially increase cost for a platform (CCA) that is meant to be produced in large numbers and reasonably attritable, albeit not exactly cheap.
Yet they decided to adopt stealthy rectangular nozzles on one of the smaller, less capable CCAs shown in the parade?Stealth nozzles will increase cost and weight. Considering this is an aircraft similar in size to the JF-17, the slight RCS (Radar Cross-Section) increase is acceptable—it might even make it appear like a larger manned aircraft on radar.

I don't know about folding wings, but it appears to have all-moving wingtips ala-J-50...OMG….do I see folding wing lines or are my eyes deceiving me? Or whatever AI photography is making things up…..
It could be due to the angles of the views but the one wrapped in tarp looks shorter and having a different angle of wing sweeping.View attachment 160010
The tarp covers the gap you are trying to point out but you can see the middle hump and overall shape still be the same. If we had a better resolution we could have compared the truck numbers. But I think they are the same.
In the latest Chahuahui Yankee said not only was that GJ-21 not a model, but it in fact flew to Beijing under its own power rather than get trucked in.
