What do the mooncakes taste like??
Zhou Xidong makes mooncakes in his pastry shop Qingxinzhai in Yinchuan, capital of northwest China's Ningxia Hui Autonomous Region, Sept. 7, 2014. To the Chinese, eating mooncakes is the must when families celebrate the Mid-Autumn Festival, which falls on Sept. 8 this year. Although streamline mass-production has been applied to the mooncake-making job, time-consuming handmade mooncakes still gain favor from consumers by their mellow taste and delicate appearance. It is pie and the filling is made of lotus seed paste that has been cooked with sugar and oil until caramelized, so it resembles pecan pie filling but firmer and more doughy. The taste of the lotus seed itself is very subtle but as distinct as peanut is from almond nut. Because it is not toasted but cooked with a wee bit of lye water, it does not have the toasted smell that Westerners are more used to. Red bean filling is also common and lotus seed filling with matcha (green tea powder) is also available.

The skin of the pie as pictured is on the soft side because of the amount of syrup and oil used and is baked well before it becomes hard. But flaky skin variety is also quite popular.

In the old day, mooncake's filling are famously lotus-sand and five-nut. Both of them are extremely sweet, we usually drink high-dense tea after eating mooncake, and never take more than half of a mooncake. If you take a whole box (four cakes), you better have a doctor stand-by.

HAPPY MID-AUTUMN FESTIVAL TO EVERYBODY!

Going with tea is not just to cut the sweetness, it also helps to prevent insulin spikes. When I make any dessert, I use anywhere from 10 to 60% of the original amount of sugar.

All traditional Chinese festivals go by the Lunar calendar. The idea of summer ending on September 22nd is based on the Solar calendar.

The Solar calendar is more scientifically accurate, and the Lunar calendar differs from it by a few days. I suspect this explains why the Mid-Autumn festival is in the summer and the Spring festival is in winter in the 21st century.
