and of course if you have three layered meat, it will top them all

well unless if you go to a fine dining French restaurant and they make a whole other world of that lean meat

You would never see meat or fish sold like this in the US. Does anyone in China sell meat or fish that is in a refrigerated case? And why no gloves? I would not buy from this person. It just does not look sanitary.

Drug detection dogs are cared for and trained in a training base in Urumqi, capital of northwest China's Xinjiang Uygur Autonomous Region, June 21, 2012. In the eyes of drug control officials of the Urumqi Customs District, their 12 detection dogs are more than heroin-sniffers; those buddies are comrades. In a sense they are indispensible: the dogs have helped in the seizure over 600 kilograms of drugs and 5.25 tons of acetic anhydride, a drug precursor, in a decade or so since the Urumqi Customs District set up its drug detection dog training base. A typical day at the training base starts from the early morning, when trainers check and clean up the kennels. The kennels' dwellers then receive regular trainings until noon. At noon, the dogs are taken to places under customs supervision: an international airport, for instance. After the arrival, they will be assigned different sniffing targets, which include vehicles, luggages and flight passengers. The field tasks usually last from noon to the end of afternoon. A detection dog is rewarded for each successful task. Like kids, dogs also need incentives to make progress, said He Feng, a local drug control official in charge of the detection dogs. i can't speak for those in China, but i think it is not very different from here
my hometown also had a Chinatown market, and the pig butchers/meatsellers were all Chinese

this is the case with most 3rd world or traditional market, no gloves, there is no refrigeration (ice blocks/crumbs are put with fish to keep them fresh, fish do spoil faster, like half a day and sea produce quality degrade within hours if not minutes without refrigeration)
delivery from slaughter house to the market are also kept within hours
there is no room for spoiled produce, because customers will make sure (and they know! especially the housewives) they get fresh ones

is it sanitary or not? i think they are safe, because i grew up from eating these stuffs :)
ancient people didn't wear plastic gloves, did they?

I remember markets like this in the Philippines. We bought only fresh catch sea food...we purchased our food on base in the Commissary.

It just does not look sanitary.
That is the least you should worry about.

According to my aunt in China, people like fresh foods. Usually people will go to the market every morning before work to buy only one day worth of meat/fish/veggies, finish it and go back next day. She also complained Chinese refrigerators are no good for preserving foods' freshness.

Go to Houston's Hong Kong Food Market in Chinatown and you'll see some Chinese butcher there don't use gloves at all when handling some of the fish and meat products. From that picture above at least there are not any flies buzzing around (that I see). LOL...to me that spells Peptmo Bismol later on!
