Update: Thailand's military has captured the entirety of the high-ground in the Prasat Preah Vihear direction.

Thailand has captured approximately 75 sqkm of Cambodian territory, so far.

Can anyone tell me what the point of this land incursion exactly is?

Thailand armed forces are far superior than Cambodia. If this conflict escalate into total war Thailand could steamrolled Cambodia within a month much like Germany Polish war in 1939
Thai military are good enough for defense but offense is another thing entirely. Most of the training, equipments and weapons of Thai military are mainly for defensive purposes. Logistic, terrian also need to be considered.

There aren't gonna be Thunder Run to Phnom Penh. At best, it would be an incursion into Cambodia territory to established buffer zone and forced negotiation that favor Thailand term.

Both the Thai and Cambodian economies are heavily dependent on tourism, and war is bad for business. As such, this conflict isn't going to last long or get too hot. Granted, once things "wind down," occasional border skirmishes may continue to occur until relations between Phnom Penh and Bangkok fully renormalize.

The Thais have geographical advantage in that area. They have the higher ground and can see for tens of kilometers into Cambodia.
